You—and everyone you know—will love these! They’re both salty and sweet. They’re both crunchy and creamy. If you have a get-together or potluck coming up with a bunch of non-AIPers, just whip up a couple dozen of these. You won’t have to worry about having nothing to eat, and your fellow guests will be drooling over this gorgeous appetizer!

Ingredients:
1/2 cup solid cream from the top of canned coconut cream (chilled in the fridge overnight)
1 tbsp olive oil
1 and 1/2 tbsp nutritional yeast
3/4 tsp garlic powder
1/2 tsp salt
6 dates
6 pieces of prosciutto (look for brands with the only ingredients: pork and salt)
Directions:
Remove prosciutto from packaging, gently twist each piece (as pictured), and lay down on air fryer basket
Air fry prosciutto at 350 F for approx. 5-7 mins (you want them lightly crisped but not crumbling/falling apart when bent)
To prepare stuffing place coconut cream, olive oil, nutritional yeast, salt, and garlic powder in immersion blender cup
Blend with your immersion blender for a few minutes until fully combined
Allow stuffing to sit in the fridge 30 mins to 1 hr to firm up slightly
Pit your dates (or use pitted) and gently use your fingers to hollow out the inside of the date
Use a piping bag (or plastic bag with the corner snipped) to pipe the chilled stuffing into the dates (do not overfill, as some will squeeze up when toothpick is inserted)
Wrap the prosciutto around the stuffed date and secure with a toothpick
