PISTACHIO PROTEIN ICE CREAM

This delicious Modified AIP recipe is a creamy dream come true! It’s perfect for satisfying an ice cream craving while still nourishing your body with healthy fats and a nice serving of protein. Along with raw pistachios, hemp seed protein does the heavy lifting here—adding to both the protein content and the green, pistachio color. No ice cream maker required!

PISTACHIO PROTEIN ICE CREAM RECIPE

Ingredients:

  • 3 cups of coconut milk (only ingredients are coconut and water; for example, Thai Kitchen brand)

  • 120g hemp protein (only ingredient is hemp seeds; for example, Wilderness Poets brand)

  • 140g raw pistachios

  • 1/2 tbsp salt

  • 1/2 tbsp vanilla powder (only ingredient is vanilla bean; for example, Wilderness Poets brand)

  • 6 Medjool dates (approximately 90g)

Directions:

  • Place all ingredients in a blender

  • Blend until smooth

  • Pour into your ice cream maker and follow ice cream maker instructions —OR— pour into freezer-safe container and freeze for approximately four hours until set

  • Enjoy!

NUTRITION NOTE

The crunchy, colorful pistachio is a wonderfully nutritious and versatile food. Although considered a nut for culinary purposes, it is actually the seed of the pistachio tree fruit. Among nuts and seeds, the pistachio is a great choice when it comes to protein, as they are made up of about 20% protein. Pistachios also contain ALA, a type of omega-3 fatty acid, which may help reduce inflammation. Additionally, pistachios contain tryptophan, an amino acid which aids in the production of serotonin and melatonin—a recipe for promoting healthy sleep!
