PALEO PEPPERMINT TRUFFLES
The holidays just wouldn’t be the holidays without some festive sweet treats. However, we don’t want to work hard all year on our nutrition just to let it all go out the window in December! My Paleo Peppermint Truffles give you that festive indulgence you crave without the sugar crash. This no-bake treat comes together quickly and easily in the food processor. As an added bonus, the organic peppermint oil in both the filling and chocolate coating will make your gut happy and calm in the midst of the holiday rush.
PALEO PEPPERMINT TRUFFLES RECIPE
INGREDIENTS
Filling:
1/3 cup tiger nut flour
1/2 cup coconut manna/oil solid at room temperature (melted)
Approximately 1/2 cup raw cashews
2 pitted Medjool dates
2 tbsp water
Dash of salt
5-6 drops of food grade peppermint essential oil
Chocolate coating:
Hu Chocolate paleo “Gems” (3.5 oz bag)
5 drops of food grade peppermint essential oil
Topping (optional):
Crushed coconut chips
DIRECTIONS
Add tiger nut flour, melted coconut mann/oil, cashews, dates, water, salt, and peppermint oil to a food processor and grind until fully combined and smooth
Roll the filling into about 14 balls and place on parchment paper
Melt the Hu Chocolate Gems
Add peppermint oil to the melted chocolate and mix
Drop each filling ball into the melted chocolate, roll until fully coated, remove and place on parchment to cool
Sprinkle with crushed coconut chips (optional)
Allow to cool fully (in fridge/freezer; optional)

Peppermint has long been a popular home remedy for gut ailments. Natural peppermint oil helps to calm the muscles of the stomach, and it has also been suggested that it can help increase bile flow to aid in fat digestion.
