PALEO N’EGG NOG
Did you know that egg nog originated in medieval Great Britain as a drink called “posset” traditionally made of milk, wine or ale, and spices? Toasting with it was said to bring wealth and prosperity in the coming year. While my paleo version cannot promise you wealth and prosperity, it can promise a nice big helping of egg-free holiday cheer! Made with dairy-free coconut milk as the base, this pleasantly spiced and perfectly thick nog will curb your egg nog cravings this holiday season.
PALEO N’EGG NOG RECIPE
Ingredients:
2 cups coconut milk
2 tbsp hemp seed butter (eliminate for AIP)
1/2 cup maple syrup
1/2 tsp vanilla powder
1/2 tsp cinnamon
1/8 tsp ginger
1/8 tsp cloves
Pinch of turmeric
1 tbsp arrowroot flour
1/2 tsp gelatin (sub agar agar for vegan)
Directions:
Add coconut milk, hemp butter, maple syrup, vanilla, cinnamon, ginger, cloves, and turmeric to a blender and blend until smooth
Pour mixture into a saucepan and heat on low
Add arrowroot and gelatin and whisk on low heat to thicken
Once somewhat thickened, take off heat and allow to cool (it will thicken more as it cools)
Garnish with cinnamon sticks and serve cool

NUTRITION NOTE
Hemp seeds are are a nutritious addition to your nut and seed arsenal. Technically a nut from the Cannabis sativa plant, hemp seeds are a good source of anti-inflammatory omega-3 fatty acids. They are also a great source of plant-based protein boasting significantly more protein than chia seeds and flaxseeds. Hemp seeds are also considered a “complete protein” containing all essential amino acids in one plant-based food source.
