NO BAKE MOLASSES POWER BALLS RECIPE
Ingredients:
120g extra fine tiger nut flour (I used this one: Tiger Nuts Flour.)
120g unflavored plant protein powder (For this recipe, I like Sprout Living Epic Protein.)
1 tsp salt
2 tsp vanilla powder (Wilderness Poets Pure Ground Organic Vanilla)
1/2 cup water
4 tbsp blackstrap molasses (Wholesome Organic Molasses)
4 tbsp extra virgin olive oil
Directions:
Mix tiger nut flour, protein powder, salt, and vanilla powder in a large mixing bowl (I like to use my trusty Kitchen Aid stand mixer.)
In a separate medium bowl, mix water, olive oil, and molasses
Slowly add the molasses mixture to the dry ingredients as you keep mixing
Mix until fully combined
The dough should come together and be slightly sticky
If the dough is too dry and crumbly, add water slowly until you get a slightly sticky mixture
Use your hands to roll dough into balls
Recipe makes about 30 balls

NUTRITION NOTE
The molasses used as the sweetener of choice in this recipe has some surprising yet amazing health benefits. Molasses is made from boiling down the juice of sugar cane or sugar beets to remove the sugar crystals. What’s left is a thick, viscous substance with a deep, complex and sweet flavor—along with a nice bit of nutrition! One tablespoon of molasses boasts 10% DV of calcium, 8% DV of Vitamin B6, 10% DV of magnesium, and a whopping 20% DV of iron—making it a great choice of sweetener for those struggling with anemia.
