AIP N’OATMEAL RAISIN COOKIES RECIPE

For those oatmeal raisin cookie lovers, these cookies come together quickly and easily to satisfy the craving for the perfectly chewy and just-sweet-enough oatmeal raisin cookie. Using unsweetened raisins and sliced tiger nuts instead of oats, they are 100% Autoimmune Protocol (AIP) compliant and 100% delicious! These tasty cookies are a major crowd-pleaser—even for the non-AIPers in my life. Enjoy!

Ingredients:

  • 50g tallow (melted)

  • 50g palm shortening (melted) 

  • 1 and 1/2 tbsp molasses 

  • 2 tbsp olive oil 

  • 2 tbsp unsweetened apple sauce  

  • 2 tbsp maple syrup 

  • 85g maple sugar

  • 1 tbsp gelatin 

  • 150g tiger nut flour (about 1 and 1/4 cups) 

  • 75g sliced tiger nuts (just under 1 cup)

  • 1/2 tsp salt

  • 1/2 tsp baking soda 

  • 1 tsp cream of tartar 

  • 150g  of unsweetened raisins 

Directions:

  • Preheat oven to 325 degrees F

  • Combine wet ingredients (tallow, palm shortening, molasses, olive oil, apple sauce, and maple syrup) in a large mixing bowl

  • Combine dry ingredients (maple sugar, gelatin, tiger nut flour, sliced tiger nuts, salt, baking soda, cream of tartar, raisins) in a separate large mixing bowl 

  • Pour wet ingredients into dry ingredients and mix until fully combined

  • Line a baking sheet with parchment paper 

  • Form 12 dough balls about 2 inches across in diameter, and place then a few inches apart

  • Bake at 325 degrees F for approximately 20 minutes 

  • Allow the cookies to cool to room temperature before transferring from baking sheet
