CREAMY ZUCCHINI TAHINI
One of the complaints I hear most often from those who are striving to eat healthier is: “but eating healthy is so bland and boring!” With quick and easy recipes like this Creamy Zucchini Tahini, I respectfully disagree. I love quickly whipping up this tahini, which works as a sauce or dip, in my food processor and pairing it with vegetables. With the zucchini hidden in the recipe, you are sneaking in an extra serving of vegetables—even if you decide to pair it with chips or crackers. It’s super simple, super delicious, and totally fool-proof!
CREAMY ZUCCHINI TAHINI RECIPE
Ingredients:
One zucchini peeled and chopped (raw or steamed; works either way)
4 tbsp sesame paste/tahini with sesame as the only ingredient (for example, Seed + Mill brand)
1/2 to 1 tsp lime juice (depending on taste preference)
1/2 to 1 tsp sea salt (depending on taste preference)
Directions:
Start with 1/2 tsp of lime juice and salt
Grind all ingredients (zucchini, tahini, lime juice, and salt) in a food processor until smooth
Taste and add the remaining 1/2 tsp of lime juice and salt if desired
