AIP RAINBOW SALSA RECIPE

Ingredients:

  • 1 Granny Smith apple peeled and chopped

  • 1/2 cup chopped fresh mango

  • 1/4 cup chopped red onion

  • 2 tbsp chopped fresh cilantro

  • 1/2 small cooked beet + 1-2 tbsp juice from beets (You can buy pre-cooked fresh beets by the brand Love Beets. The plain flavor with no other ingredients except beets works best here.)

  • 1/2 avocado chopped

  • 1/2 tbsp extra virgin olive oil

  • 1/4 tsp salt

    Directions:

  • Mix all ingredients together

  • Enjoy!
