AIP PUMPKIN SPICE COOKIES
For all the #fallvibes lovers out there! These perfectly-spiced comforting beauties are pumpkin pie in a cookie. The cinnamon, ginger, cloves, and vanilla meld together for a warming and nourishing AIP spice combination (note: traditional “pumpkin spice” includes nutmeg, which is omitted on AIP). These cookies are delightfully chewy to perfectly deliver that soft pumpkin pie feeling. Cozy slippers and slow burning fireplace optional!
AIP PUMPKIN SPICE COOKIES RECIPE
INGREDIENTS:
Dry ingredients
3/4 cup tiger nut flour
1 tbsp gelatin
1 tsp cream of tartar
1/2 tsp baking soda
1 and 1/2 tsp cinnamon
1/2 tsp ginger
1/4 tsp ground cloves
Dash of salt
1/4 tsp vanilla powder
Wet ingredients:
1/2 cup pumpkin puree
1/4 cup unsweetened apple sauce
1/4 palm shortening
DIRECTIONS:
Preheat oven to 350 degrees Fahrenheit
Combine all dry ingredients in a medium mixing bowl
Melt the palm shortening in a small heat safe bowl
Add the rest of the wet ingredients to the melted palm shortening and combine
Add the wet ingredients to the dry ingredients and mix until fully combined to form a sticky dough
Roll dough into 12 small balls and place on a parchment lined baking sheet
Use a fork to press down on the cookies to flatten slightly
Bake at 350 degrees Fahrenheit for approximately 12-15 mins
Let cool completely and enjoy!
